    I have the last batch cooking now,they are delicious.I made emeril's onion gravy to go with these.I did almost this same thing last night with leftover dressing and they were really good too.I put cranberry sauce with them and boyfriend loved them that way.Great ways to use leftovers.I have an aioli made up in the fridge that I will try these with tomorrow as I made a double batch of them.

    I made this recipe last year and it was a big hit with kids and adults. I will be making it sgain this year. Very tasty and easy.

    I made the turkey crouquettes but skipped the mushroom gravy and used Tyler Florance's garlic aioli instead. Turned out great.

    I liked these but I did what Rachael always suggest to do. I eyeballed it. So for me I wanted more turkey and potato less bread crumbs. I used both chicken broth and some leftover gravy( I had both on hand less of the rosemary. I used everything she suggested but I did it the way I wanted it and it came out sooo good!! Would I do it again yes. Either following her recipe or adjusting it to your own liking(and pantry it's a good way to revamp your leftovers.

    I really liked these, but being an experienced cook, I usually just get ideas from recipes & run with it. I used ground turkey Italian sausage, regular bread crumbs, no egg, no mashed potatoes, and no rosemary (just an oversight there, will try it with the rosemary next. this is likely why I dodged any consistency/binding issues, I go by what I have, not the precise measurements, unless I am baking. Trust your instincts, recipes MUST be altered when dealing with different humidity, altitude, and of course, tastes. Your ingredients will never be exactly the same as someone else's (fat content of meat, size of egg, type of breadcrumb, variety of herb so don't be afraid to experiment.

    Let me preface by saying that I consider myself an accomplished cook. I can't recall the last time that a recipe went really wrong....until now. OMG! I HATED this recipe. The ratio was off on the binding ingredients. It soaked up the oil like crazy! The croquettes fell apart. I had greasy, crumbles of turkey. The gravy was just awful. I can make gravy with my eyes closed. I made the mistake of following the directions/recipe. It was way too watery. There was too much rosemary in the gravy. It had a super strong taste that nobody cared for. It was a complete, total debauchle. Never again. Yuck!

    The taste and texture of these delicious fried treats took me back to childhood memories of Holland where croquettes are ubiquitous. My heart sang with joy at the first bite -- I was transported back to my youth! Thank You So Much, Rachel! These are so good you can serve them to guests with No Guilt Whatsoever and they are arguably even better than the Thanksgiving dinner they started out as (no kidding!.

    What a great way 2 use up leftovers!! Made day after Thanksgiving & everyone loved it!! Started coming up w/variations using different leftover meats & vegetables!! Chicken, venison, even leftover pot roast. Sweet potatoes instead of mashed potatoes...Hmmmm...Think the next time I will try making them into balls w/a piece of cheese in the middle. Deepfrying instead of pan frying might be the way 2 go w/that option.
