I was afraid of using balsamic vinegar based on previous reviews, so I substituted Port Wine....YUMMY!

After reading the reviews, I tried the fig sauce with brie and baguettes and it was absolutely yummy. We have a huge fig tree in our yard and I have been on the look out for new fig recipes. The fig sauce was delicious and I cannot wait to try it out on the vanilla ice cream.

I have never made this sauce to use with ice cream...I'd rather have Chambord over mine. However, my wife and I have served this sauce over brie cheese on toasted baguette as an appetizer, and our guests loved it. Give it a try at your next wine and cheese party.

I bet a lot of the people that hated it used a young balsamic. The longer balsamic is aged the sweeter it gets, and you have to use a sweet one for deserts, especially with ice cream. (I used a 20-year and got decent results. Older balsamics are more expensive, but you usually only use small amounts of them at a time. So I still consider it a good investment. Then I just use the younger and cheaper vinegars for stuff like salad dressings and such.

This is a very tasty and super quick sauce to put over vanilla ice cream. It is sure to impress and no one will ever guess its base is balsamic vinegar.

Rather than using figs, I substituted using blueberries. Very delicious; tangy yet sweet and the blueberries were a great addition.
