    It works great with pork chops, too. I use the loin chops with bone, french the bones and pound them, and it looks like veal chops and tastes as good, at about 1/3 the price. Also panko instead of regular bread crumbs makes it a little lighter.

    and it was good. I hate veal! I would use red onion instead of yellow and I added lemon to the sauce.

    I don't do the whole veal thing, so I made this with chicken instead. It was very tasty. I would recommend making sure you don't put too much EVOO in with the tomatoes because it makes the meat a little soggy. Other than that, delicious!

    I used this recipe with chicken breast, and it was very tasty. Instead of the tomatos, I served it with penne with Michael Chiarello's marinara sauce and olives. It turned out very good and my family loved it.

    I used chicken instead of veal and it is absolutely perfect. y daughter who will eat nothing asks for this all the time. It is just as good cold too.

    This is great, and the breading is so tasty. But the best part by far is the raw sauce..try it, you'll love it!
