    Wow, we LOVED this. And I strayed pretty far from the recipe. I really thought I had all the ingredients at home, only to find that my peppers had gone bad :(

    I ended up using this random can of green chiles that I had been meaning to return for months. Next time I make it, I'll probably use bell peppers, but might add the chiles in too!

    Super good, really adaptable, fast, we will definitely be eating it again!

    DE-LISH! Thanks Rachael. I made this today for a football game. I ended up using the whole can of re-fried beans (made it nice and thick! and used soy based cheese on top. Can't believe how easy it was. And makes the house smell great!

    This is the best vegetarian chili recipe that I have come across. It's easy and doesn't contain many untraditional chili veggies so meat eaters will not be put off by it. It also freezes very well. I chose to do beer instead of stock and I think it definitely added a nice flavor. Something darker like a Guiness would probably have made it even better. We used grated sharp cheddar, sour cream and oyster crackers for toppings. No one missed the meat!!

    This is a great recipe that everyone is sure to love! I used a whole can of re-fried beans to make the chili extra thick. Also, used some quality VT cheddar on top & that was enough topping for me. Whole Foods has these stale bread chip/crouton things that are amazing dippers that I highly recommend. You gotta make this!

    This is the best! I love love love this recipe. Try using Bud Light Lime for your "pale ale." Pair with sharp cheddar and blue corn chips and you have a nice cozy winter night meal. So good!

    i love this recipe, and so, to my surprise did my 6 year old son!! sooo easy and delicious and im not even a chili fan, and as for the meat, dont miss it and this is so much healthier anyways!!

    If you are looking for a veggie meat option, we added Morning Star "meat" crumbles... it tastes like real meat without the calories, cholesterol, and flesh....
