    For all sandwiches, pittas and toasts I have a great tip. Cut a tomato in half and rub it on the bread, then use jamon iberico de bellota rather than standard ham or parma. Jamon iberico ?the Spanish name- is also called iberico ham or black hoof. Iberico is really excellent and much more tasty than other hams.

    I have have been making this soup and the Genovese Sandwiches for over two years now- since the very first time I saw it on 30 Minute Meals and it is a family favorite. I actually made the soup one Christmas Eve for a soup course and my family has requested it every year since! The pesto in the soup is so tasty and the sandwiches with warm goat cheese are such a great compliment! Yum-O!

    I made this soup for a ladies lunch. One of the women said "don't give me much I am not a soup person", she asked for seconds. The pesto just makes it.

    This soup had a very rich flavor - a combination of the vegetables simmering in the chicken broth and the pesto added at the end. I used some bought pesto that needed to be finished and it was fantastic - and even quicker! My three and one year old boys loved it as much as we did!

    This recipe was great. Even my three year old picky eater loved it. I added some sausage the second time I made it which was a great twist. This one's going in my recipe box!

    My wife and I have cooked this soup at least 5 times this last month,and have loved it every time. Just be carefull not to get a huge potato, because it'll overwhelm the soup. We several of our family and friends hooked on this recipe. Hope you enjoy it as well. This is another great Rachel Ray recipe!!!
