Vegetable Chunk Salad

Ingredients

  • 1/2 pint cherry or grape tomatoes, halved
  • 1 large red or green bell pepper, cut into bite-size chunks
  • 1/2 red onion, chopped
  • 1/2 European (seedless) cucumber, cut into bite-size chunks
  • 2 ribs celery, cut into 1-inch pieces
  • 1/2 yellow squash, cut into bite-size pieces
  • 3 tablespoons to 1/4 cup extra-virgin olive oil, a couple of glugs
  • 2 tablespoons (about 2 splashes) red wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon dried Italian seasoning
  • Coarse salt and pepper

Directions

Combine chopped vegetables in a medium bowl. Place oil, vinegar, sugar, and Italian seasoning in a small plastic container with a lid. Secure lid and shake dressing vigorously for 1 minute. Pour dressing over salad and toss. Season salad with salt and pepper, to taste.

    I have pepared this on a number of occasions. I particularly like to use it in the summer when we are cooking out. It is... tasty and crunch. The picture doesn't do it justice because everything is cut up in large chunks rather than bite sized. Best of all, this is really easy to make. You could use almost any raw veggies. Use your leftover Thanksgiving veggie tray.Read more

    I gave this recipe 2 stars for the beautiful presentation, but I just didn't care for it. We had this for Thanksgiving last... year, and even though I love vegetables, it was just really blah. It was like a big mouth full of raw veggies. Jamieson didn't seem too impressed with it, either, although he would never say this out loud. Read more

    I Love This Salad!

    I have made this twice now and love it as an alternative to regular salad. This time I added a can of drained black-eyed peas... and some black olives.
