    This stew was a crowd pleaser and even better the next day for lunch! These Potato Pancakes beat out my Mother-in-Law's! Phew!!!

    I made this for a dinner party Tuesday night and it was a huge hit! The potato pancakes took longer than 30 minutes to prepare- grating the potatoes by hand was difficult. But the stew cooked up fast and easy, and was delicious. I got rave reviews about the meal from some pretty picky eaters. The stew goes really well with the pancakes. I'd reccomend doubling this. It made four servings of pancakes and stew, plus a little stew leftover for lunch the next day. It reheated well and I wished I'd made more!

    AT 47 I'VE FINALLY DECIDED IT'S TIME TO LEARN TO COOK WELL. AFTER MAKING MY HUSBAND THIS VEGETABLE STEW HE TOLD ME "THAT WAS THE BEST STEW I'VE EVER HAD." EVEN TOLD HIS MOTHER! DEFINITELY TRY THIS. IT'S GREAT!

    It really took 30 minutes to make this just the way Rachel said! My family raved over the vegetable stew and it makes for a hearty meal to feed four easily, with the Potato Pancakes. The pancakes gives this vegetarian meal that good ol full feeling so you wont miss the meat. The stew was very flavorful with the fresh rosemary and I added some fresh oregano too.

    I haven't made the stew yet, but the potato pancakes are to die for! Very yummy!

    If you don't have gouda, try them with your favorite cheese - cheddar, swiss, whatever! I also added onion salt and pepper for extra flavor. As Rachael would say, "you can flavor these up any way you like!"
