I had all the ingredients at home tonight and decided to try this recipe. It is really simple except for quite some chopping. But as suggested in the recipe, I added vegetables to the pot as I chopped them (and did not waste time waiting to have all vegetables chopped first. It was tasty.

Other than the biscuits, I had some jasmine rice, it was great with the chicken and veggies. If I don't bake the biscuits next time, I will just make the veggies and chicken and serve it with rice.

I would say this is not one of the best of Ms. Ray's recipes, but this comes close to it and is definitely a keeper!

I guess it doesn't say in the recipe, but when I watched Rachael make this on her show, she first baked the biscuits and then added them to the chicken vegetable mixture after they were baked. So if you bake the biscuits first, that should solve the problem of them being undercooked.

I brushed the tops of the biscuits with butter so they would brown well, and I substituted green beans for peas and added the frozen seasoning mix of celery, onion, and peppers...this was wonderful.. bake it around 5 minutes extra so the tops of the biscuits will brown...yummy...

The chicken and vegetables part of this recipe are easy to prepare and taste really good. The biscuits were raw except for their browned tops. Ick. I plan to make this again, but to use a pie crust on top. I'll make my own, but someone who's in a hurry could use one of those pre-made folded ones.

I was surprised how easy and delicious this really is! I added a little more butter and I used all the chicken broth from the poached chicken and it came out just great! My partner raved about it and she's a chef! Very easy...loads of flavor...and fun!

We loved the flavour of the chicken, but putting the biscuits on top didn't seem to work. The bottoms were still raw dough. Made it again and just baked them separatly.
