    I would make this again but would not put the spinach in the pan to toss. Even though I only left the spinach in the pan for a moment to toss it cooked and was soggy. I will pour the dressing over the spinach in a salad bowl next time.

    Made the recipe as is and thought it was fantastic. The large amount of spinach used is deceptive because of how much it shrinks when wilted.

    This was very good and easy. I think the proportion of Shallots was a bit too much. I scalled back the shallots a bit and they still almost over powered the dish. I would go with one shallot, not 3.

    Love this recipe! I made it with some panko coated chicken cutlets on the side and it was yummy! One thing to be careful of is to make sure the spinach doesn't get soggy! Otherwise the combination of flavors was wonderful! Thanks Rachel!

    I made this for the second time last night and once again my husband and I truly enjoyed it. I don't remember if I used sherry vinegar the first time. However, last night I used red wine vinegar. I only had two (very large shallots and I used baby spinach (about 14 oz.. I also don't eat red meat - so I used turkey bacon. I will plan to make this on a more regular basis.

    I thought this recipe was pretty good. I did used bagged baby spinach instead of the fresh and I used two bags. I also, because kids are not so big on spinach, wilted the spinach more than the recipe called for. Had to fool those kids somehow. All loved it. Very good the next day also

    Bought sherry vinegar just for this recipe and was I a fool--could have used apple cider vinegar. The sherry vinegar was about $7 a bottle. Guess our family just likes a sweeter dressing because I had to add quite a bit of sugar and a little more EVOO. Didn't add eggs and forgot the cheese. Would have preferred an old fashioned sweet and sour hot dressing.
