Awesome recipe, very easy. Found the chipotle peppers in the aisle of Mexican food at local grocery store. The roasted corn adds a lot of flavor--don't skip using the grill for the corn and red pepper. Made a double batch and froze in Ziploc bags of single servings. Yum!

The recipe is very easy so this makes it better! I used 2 chipotle peppers and it was not too spicey. Since the soup is red in color, I used a roasted green pepper. The sour cream adds a very nice touch- cold and creamy! A spoonful of refried beans would be complimentary also. Everyone in my family loves it

My husband normally hates everything but there was stuff in this recipe that he liked and it was wonderful. He said that it was "awesome" and "killer" I only used one chipotle in adobo because I was afraid that it would be too hot. It was just right. One of the absolute best.

This soup is amazing. I thought the two peppers was exactly the right level of spicy(about what you'd get at a restaurant. I also think the avacados and sour cream are essential... they bring down the heat a bit and add amazing flavor. Oh.. and it tastes better with Sam Adams rather than Guinness :p.

A really fun soup, very good. I left out
the chipotle in adobo peppers so as not
to make it too hot. The family loved it!

I added a half a head of cabbage, kidney beans, and actually boiled down a chicken for broth/meat. This was amazing, I will definately make it again and again!
