I omitted the zucchini, used regular tortilla chips (not blue and frozen corn (not on the cobb. All of the optional garnishes are a must! An enjoyable soup but defiinitely makes more than four servings (I would say eight to ten servings.
A highly recommend adding the majority of the tortilla chips as a garnish at the end. I added all four cups of the tortilla chips into the soup and they became mushy and I prefer a contrast in texture.

A friend at work first introduced me to this soup about five years ago -- and it has been a household staple ever since. My family likes it best when I add a can of black beans (rinsed and drained, and substitute diced tomatoes or even chunky crushed for the whole stewed tomatoes -- but it does make the soup more tomato-based. Absolutely wonderful soup, and very easy to make!

This was my 1st attempt at cooking something pretty involved-I'm a cooking newbie-and it turned out so good! I didn't add the zucchini or the poultry seasoning. I did add a splash or two of hot sauce and a spoonful of the adobo sauce towards the end because I like my food to have a kick to it. I added the tortilla strips (bought at the store in the soup bowl. I will definitely make this again!!

My family absolutely LOVED this! I didnt add the tortilla chips I just let everyone crumble a little into their bowl which was good because we had some left over. Ate it for lunch the next day and was still great!

I loved this recipe! I used a rotisserie chicken that I picked up from the deli to save time. The soup turned out great and was so simple.

Really good recipe, I have even used different veggies or when I didn't have zucchini I left it out. Mexican squash also works very well. Its a hearty soup that will leave you satisfied on a cold winter day.

We absolutely love this soup! It is easy to prepare and so tasty. I roast the corn and peppers in my oven. Anytime I have not roasted the veggies, my family can tell the difference; so do take the time to do so, you won't be sorry. This is definately a "go to " meal for use. I make this every week when corn and zucchini are in season and a couple times a month when they are not.
