    The recipe worked very well using regular pasta with shitaki mushrooms included separately in the sauce. Also recommend a variation in the cheese - in my case asiago was a nice fit.

    I really liked this. Unless i go to a store that specializes in Raviolli... If I go to the supermarket, I have to put the regular raviolli but it's better if they are not cheese to blend the flavors

    I could not find Wild mushroom ravioli" in our area (TN, so I sub. 4 Cheese Ravioli. I have been cooking for many years and this is a real "keeper". I could serve this to company with no problems. Very elegant presentation, with wonderful, fresh food taste. The fresh basil and goat cheese (our favorite really makes this dish! YUM YUM!!!!

    I used gorgonzola on top since I couldn't find goat cheese. This was so simple and so delicious!

    I've made this several times - we have discovered that we don't care for the goat cheese, so I just grate mozzarella or parmesan over it. The eggplant comes out tender and not bitter at all. I often use whole wheat ravioli, so with all these veggies with it you have a really healthy dinner.
