I recommend a large pot for wilting the spinich. Takes a while for it to cook down on low heat, in a large pan I'd be turning the spinich and dropping leaves everywhere.

A lovely recipe. Super simple! Be sure to eat quickly, though, as garlic chips eventually lose their crunchy texture.
