    I am a vegetarian and made this dish for my entire family which includes 2 kids. We all loved it. The hominy is so distinct yet unfamiliar in the dish. It almost tastes like pasta! I made it pretty spicy on my first attempt due to limited dried chile options in my local grocery so be sure to moderate it yourself according to taste. Since I couldn't find any blue hominy, I substituted yellow and white in its place which worked out fine. To make up for the missing blue, I served mine with blue corn chips - that was very well receivedl. Lots of cilantro as a finish really makes it sing.
