We always have to try a recipe as written first time around...LOVED this recipe. However, we're not okra fans either so the second time making this I omitted it and added shrimp and a splash of white wine. The flavors are wonderful!

I doubled the recipe, put in a little less catfish and added shrimp as well as a little extra cajun seasoning. I also added 5 large diced cloves of garlic. It came out very tasty and my family loved it. I would definitely make this meal again!

It was a great surprise to be watching RACHEL RAY on "Coastal Cuisine" tonight and see Mama Dip's Catfish Gumbo featured, since it's a local restaurant that we love! Only it's in CHAPEL HILL not in Durham...there's a huge difference. DUH! Like Durham is home to Duke Blue Devils and Chapel Hill is home to the UNC Tarheels AND Mama Dip's - about 15 miles from Durham! We're faithful viewers, Rachel, so please get your town's right when reviewing restaurants! And next time you're in town, try Mama Dip's sweet potato biscuits with ham...they're delish!

Everything at Mama Dip's is great! For the record, the restaurant is in Chapel Hill, not Durham!
