This is certainly not a dish for mid-week dinners. This dish takes a good hour of preparation; frying the capers, marinating the radicchio, slicing the carpaccio, reducing the cab sauce, blending the truffles.. However, once it is done, you have a symphony of flavors.
I prepared this with Filet Mignon... I would recommend that, because the softness of the filet is similar to the softness of the tomatoes. Also, serve this wtih some crusty bread for soaking up all the flavors on your plate.
Not a trivial dish, but well worth it!
