    Not a bad jumping-off point, but a little stripped down for my tastes. Who ever heard of a ranchero sauce without at least some chili powder?? I would jazz this up a bit by throwing some chili powder in the sauce, or maybe some chipotle peppers for a little smokiness. Jalapenos are favorite, too, for a little up front heat. Swap in tortilla chips or store-bought tostadas, or just gently fried flour tortillas (so they're still a little soft.

    Oh, and, since there appears to be some confusion about the ranchero sauce, it is in fact in the recipe. It's the tomatoes, onions, and cilantro. Really, in any huevos recipe, the majority of the text is going to be your sauce, because the rest can be summed up as: "Fry eggs, place on tortilla."

    Im sorry I couldn't let that last post from"giraola" in Miami go unchallenged! The directions for the recipe clearly states "Add rancheros sauce on top of eggs. " and if you look at the picture there is a "Ranchero Sauce" on top of the eggs! There are No ingredients or instructions listed for the Ranchero Sauce as is, so there is indeed a mistake in the Recipe as written. Also the Beans are a "Ranch Style" Beans completely different from Ranchero Sauce! So giraola, you need to use your head!

    Recipe instructions call for rancheros sauce, but it's not listed in the ingredients, nor is it given as a separate recipe.
