This has become one of my favorite meals. To make this recipe a little more mild, I've found that I can use about 1/2 a green bell pepper instead of the jalapeno.

Couldn't find the jalepeno cheddar tortilla's so i stuck with typical ones.....I also added some chopped chili's in the meat mixture. made them all at once, sprayed a 9 x 13 dish, layered them all. Once in i covered with the marinara and put more cheese on top and threw it under the broiler for about 5 minutes to make the cheese all bubbly....

Served over spanish rice also which was a nice add on to this meal. Over all, it was deliscious. Had left overs for lunch and next day dinner.

I made this last night for my wife and I. We both loved it but next time i will use one jalapeno. Overall I will totally make this again.

This is a fun recipe. To make it completely guilt free, I use fake hamburger meat. Morningstar farms is the best. You really have to make an effort to season it, so I also add fake chorizo. Good for leftovers.

This is a great way to put a spin on traditional enchiladas. I loved everything about it. Great job Rachel, as always.
