I'm wanting to try this recipe, however, having looked around, I've not found a "skirt" steak. I have found at our local Hispanic market, a flap steak. I this the same thing? I have a slight communication problem, I don't speak the language and sign language can get downright goofy!! My parents had a restaurant, so I'm not above switching ingrediants, or omiting to taste, I consider a recipe a starting place to use culinary creativity.

I haven't tried the recipe, but wanted to comment on the show. I have enjoyed all the "Throwdown" shows, but this one was the best episode I have ever seen. Father Leo was a wonderful opponent, and he and Chef Flay put on a great show. While Chef Flay lost the competition, I think that's because the crowd were used to Father Leo's fajitas, and wanted him to win.
Chef Flay takes on huge risks every time he has a "Throwdown" as the people eating the food are used to the other chef's recipe.
I hope this show is on for a LONG time!!!

If you want a fajita recipe with less ingredients try out Sandra Lee... Although since she can't cook I doubt it will be as good.
Great taste to these fajitas!

Like a few other people have posted, why are you reviewing this recipe if you haven't made it? To those of you begging for Leo's recipe, go to his website! To those whining about this recipe having too many ingredients, cry me a river. Sometimes good food takes more than ten ingredients. Either make the recipe and review it honestly or shut up.
Anyway, like only two others have done, I've actually made this recipe. You may want to taste the pickled peppers and barbecued onions before adding them to your fajita. The meat is so incredible that it was difficult not to eat it without making the rest of the stuff. Overall, this is a great recipe.

It seems strange to me that in 10 reviews of this recipe only one person (other than myself actually made the dish. What are they reviewing?
Anyway, I had most of the ingredients on hand (I make a lot of curries and the recipe was not very difficult to make (as opposed to some of Bobby' Flay's Iron Chef creations. I live in south Texas and was pleased to see this fusion recipe from Chef Flay that wasn't the usual Southwest or Tex-Mex treatment of fajitas. It seemed much more interesting than the Father's dish and was surprising easy to prepare.
I did make a few changes though. I used a quality prepared bar-b-que sauce for the onions and I bought a jar of bell peppers that was already pickled. Other than that, I did everything else "by-the-book". Skirt steaks are easy to get where I live but I am not too sure about other parts of the country. I have found that it has a unique flavor and texure, Many Texans believe that it would not be a steak fajita with any other cut of beef.
The curry marinade really makes the dish. I had leftover meat and just snacked on slices of it for a while. DELICIOUS! I would encourage others to just try it instead of being intimidated by the number of ingredients.

Fr. Leo was great, as were the guests, and the recipes were both yummy! Bobby and Father were hilarius together. I can't remember when I enjoyed a cooking show more. I am on board with a Food Network show for Fr. Leo!!

I'm a little biased being from Maryland, and there was a lot of local hype for him. He is very entertaining, very unique and should have his own show! Would also love to have his recipe.

After watching this episode of 'Throwdown', my girlfriend and I were very intrigued by the red curry marinade. Yesterday, we made a trip to the grocery and to the local Asian market. Yes, there are a lot of ingredients, but I already had a lot of them and the rest were easy to find. Besides, they break down into five or six different recipes, all of which are simple. I recommend an overnight marinade just to make sure that the steak absorbs as much flavor as possible.
After preparing the sauce, rub, and avocado crema, we fired up the grill and threw on the onions and skirt steak. Everything smelled wonderful as it was grilled.
The finished product was fantastic! The flavor of the onions and pickled peppers really set these fajitas apart, and the red curry marinade gave things a tasty twist. The only changes we made were to roast and add poblano peppers to the pickled bell peppers.
I highly recommend that if you make these fajitas, for the first time, be as true to the recipe as possible. I also recommend that if you haven't made this recipe, don't be an idiot and post a review. Posting "It looks too hard" or that someone should have his or her own show is not what these reviews are for! It's deceptive to people actually interested in cooking the recipe. If you want Father Leo's recipe, why don't you go to his website instead of spamming this one? I found his recipe rather easily.

I would love to have Father Leo's recipe since he won! Looked at Bobby's recipe and it has a zillion ingredients! First the rub, then the BBQ sauce, then the pickled peppers, then the marinade, then the avocado crema. Too much!! Father Leo should def have his own show- he was so much fun to watch!
