Wouldn't change a thing! Saw this recipe on TV today with the Creole Catfish and knew I had to give it a whirl. This recipe is SUPER EASY people!! I added my favorite hotsauce (Lousianna brand and a few extra dashes for an added kick. The boyfiend gobbled this up along with the catfish (also from Sandra Lee's "Bayou Mist" episode. Cheap, easy, and great leftovers...will make this again!

As a new home cook I found this recipe very easy to adapt to my own tastes. I have made it twice this month alone and when I took the leftovers to work, I had to fend off my coworkers w/ a stick. I added a little bit of Emeril's Bayou Blast seasoning and it tasted awesome! One pot cooking for dinner is always nice but with a recipe as versiltile as this it's like a different dish everytime. I would highly recommend this recipe to anyone that loves watching food network but feels their cooking skills couldn't make par. I tried making it and it turned out great. This recipe you could say gave me the guts to try out some others.
