Not a fan! The cake has no flavor - like other reviewers have mentioned. I should have listened to the reviews! I am very disappointed with these. I am actually not serving them because they're not worth the calories. :(

These cupcakes were so bland. The frosting was the best part. I used 3 cups of flour and 1/3 cup of cocoa powder so it can bring out more of a "chocolatey" flavor. Well, they were not good. I followed the recipe with just those 2 minor adjustments but i did not like the end result. I dont know what went wrong. I was in the hunt for a delicous red velvet cupcake that would not be too oily and sought out for this. Afterall, it came from an episode of Cupcake Wars. I guess the hunt is still on...

I made these for some of my co-workers. I think the frosting is better than the actual cupcake. I didn't like the apple cider vinegar so next time I will just go with normal vinegar. I also added chocolate chips with the second batter and it tasted better. I had to make a second batter because I had so much frosting left over.

I made these for a baby shower and they were delicious! Followed the suggestion and used 3 c flour and 1.5 cups buttermilk. Also used 1 tsp more of applesauce and the cake was very moist, but not soupy. Cut the frosting recipe to 8 TBS of butter, 16 ozs of cream cheese, 3 c of powdered sugar, 2 tsps of vanilla and would reduce to 1 or 1.25 tsp of almond extract. That would make the right amount of frosting for all the cupcakes. I think next time I'll use 1/3 c cocoa powder and it should be perfect! Didn't have all the fancy mixer setups and it still came out delicious. Now my "go to" cupcake recipe.

Excellent recipe! Made it for a potluck at work and everyone loved it! No leftovers! The frosting recipe is enough for 1 1/2 batches so much went to waste. Also, the cupcake was a little dry so I adjusted the recipe slightly for the next time. When our director was thrown a potluck for a major achievement, she asked if I'd make cupcakes again and someone else asked for these. Used 3 cups of flour and 1 1/2 cups of buttermilk; very slight adjustment and it was fantastic! The frosting is a huge hit too!

I made this for my sons birthday party along with a tangerine cake. They were both a hit, but the cupcakes went really fast. Everybody that had one loved them!!! I will definitely use this recipe over and over again. Was absolutely delicious!!! I did cut the icing recipe in half and didn't have too much left over...

I love this recipe! I used to have a go-to recipe for red velvet cupcakes but this is now my new go-to recipe! I love that you use more of the cocoa powder and get more of that chocolate taste in the cake part. The cake is really moist without being too oily. I love the almond cream cheese frosting - it's a very nice twist! I agree with the other people who reviewed this - there is wayyy to much frosting left over! Try cutting the frosting recipe in half unless if you want to use the leftovers for something else.

I didn't make the frosting but I made the cupcakes. THEY WERE HORRIBLE. I don't know what went wrong, I followed the recipe exactly. maybe it's the combination of the applesauce and the buttermilk or the oil and applesauce? I don't know, but they baked up in a really odd way, and they don't taste like red velvet the slightest bit. They don't taste bad but they're definitely not good and not red velvet. I advise you don't make this recipe. I was very disappointed and will never use this recipe again.

The Almond Cream Cheese frosting alone is delicious, but added to this red velvet, it just didn't go well together. The cupcake was also a hit or miss. some thought it wasn't red velvety and the others liked it, though thought it was a little dry.
