This is a great tasting soup and it is very easy to make. I substituted smoked or Polish sausage for the ham and it was to die for. My latest addiction is this soup.

Its really good but I don't like the chalky cheese texture.... can that be fixed some how? I can never get the cheese to melt completely

I successfully used 6 cups of 1% milk, 2c. cheddar and 1c. mozzerella cheese, and also grated two russets (and added with the onion to start them cooking for thickness. I hate broccoli, but my kids LOVED this soup! Good way to use up odds and ends of cheeses!

I tried this recipe and it was very bland so I added more spices and it was still not much to my liking... so I fed it to my cat.

O.k. I read all the reviews before I made the soup, made a few adjustments and it turned out great! I used 2% milk instead of whole. Didn't realize I was about out of butter so I did half a cube with a little olive oil. What I did that was very different was that I cut up my broccoli and cook it in chicken broth. then I used my blender to wisk it up and added it to the milk mixture. Threw in a little x-tra cheese, adjusted the salt and pepper and this was one of the tastiest broccoli soups I've made!

This came out decent. It wasn't bursting with flavor and I didn't expect it to based on ingredients, but it was a little too bland for me. I over salted and peppered as well. It also wasn't as cheesy as I prefer and I added extra cheese to it, but still good. Super easy. Took longer than the recipe stated for my broccoli to soften. Will probably make again but with slight alterations based on personal preference. It's a good base to experiment with to make into a rockstar recipe.
