First let me say, as someone who has had that type of food, at my grandmother's table, she cooked it JUST RIGHT! If you've every had a chicken fried steak at a restaurant you haven't had the real thing. You'll be suprised at the difference.
About the food caloric/fat in these dishes, please remember, the people who are eating this food are hard working ranchers.

You can easily use the flour that was used to dredge the meat because it gets cooked in the gravy.

It's a good recipe. As far as the butter content, people need to chill. It's not a law to make Foodnetwork recipes the way they're on TV. The purpose of the network is to get recipes for us to make for our families. You don't get anything out of trashing a hardworking chef on their recipe's comments. Very mature.
Great first episode- very warm and engaging.

Congratulations, Ree, I loved your first episode. The chicken fried steak is awesome. I've made it before from your cookbook which has yummy recipes. Paula Deen cringe from your recipes, no way! You two are like two peas in a pod. You made 5 pounds of potatoes, not two potatoes and gave them love. You have some hard working people you are cooking for and they go out and work that food off. Like you said in the video, they don't eat chicken fried steak and mashed potatoes and gravy everyday. I could but shouldn't. I liked seeing the everyday workings of the ranch. It's real. You are already a success and it will not stop here. Yeah!!!

I grew up in a small rual town in Texas. I'm pretty sure this is the way the women use to fed the working men however a true cowboy would never ever sit down at a table with his hat on!! Other than that oversight of cowboy manners I loved the show and think it is very entertaining! I will use my own judgement on the oil & butter.

I never made chicken fried steak before, but I will now. I will be making HUGE adjustments though. I WILL NOT BE PUTTING THAT MUCH BUTTER IN MY POTATOES. THAT IS JUST SCREAMING HIGH CHOLESTEROL. I thought Paula Deen put a lot of butter in her dishes, but this woman puts her to shame. And I definately won't be using the same flour she dredged RAW meat in. I'm gld that she has measurments here on the site for her recipes cause she sure didn't mention them while she was cooking. I'm not counting her out yet though.
