I loved this recipe; my husband thought it was just "ok"...so, to each his own! The first time I made it, I had enough for a 9x13 casserole plus a smaller 2 quart that I froze. I'm making it again for a potluck and, like other readers, will slightly saute the veggies this time. I made chicken broth from a leftover rotisserie and plan to use that as well as another rotisserie chicken. So easy! This will be a regular go-to for me; the epitome of comfort food..people who prefer "gourmet" should have already gathered that anything from the "Pioneer Woman" is not going to be foie gras.

My family loved this recipe, my kids and husband don't care for bell peppers so substituted with a can of roasted tomato salsa and it turned out fantastic. Thanks Ree, all your recipes are no fail!

Easy & Tasted Great! I had a rotissary chicken from the grocery, so it went together in a snap. My husband loved it. I cooked 1/2 for us and will take the other 1/2 to a friend with a new baby.

I saw this and couldn't wait to make it. I had a roasted chicken so with that and ingrediments that I had in my pantry I made this great dish. It was a little salty so next time I will use low sodium broth. Cann't wait to see my husbands reaction.
