Huge hit! Had to make dinner for four AND bring a dish to a potluck. Made in two separate 8x8 casserole dishes. Changes/additions: 1 full cup of diced green pepper. 1 full cup of diced sweet onion. 1 4oz jar of pimentos drained, instead of the red pepper, which is how Ree makes it on her Pioneer Woman website. 3 cloves of garlic minced. Sauteed the pepper, onion, pimento and garlic in 2 tbls of butter until tender. In addition to the cayenne, I added a can of diced tomatoes with green chilies drained. It gave it a nice little touch of heat without overpowering the dish. Too lazy to boil a chicken, so I used a rotisserie chicken instead, and lower sodium chicken broth. I also used 1 can of Cream of Mushroom and 1 can of Cream of Chicken and Mushroom. Next time I will add an additional cup of chicken, sauteed sliced portabella mushrooms, use these if you want to make a vegetarian version, and maybe peas too. It's a very flexible dish and a real crowd pleaser!

This pleased everyone in my family, and they all came back for seconds. But I would say that this feeds much more than 8 people, more like 12 of the people I feed!

I don't get the glowing reviews. Tried this over the weekend and it was horribly salty, greasy with all the cheese, and the texture was unappetizing. We has to trash the whole dish. What did I do wrong?

Made this last night for my family & in-laws. My mother-in-law is an exellent cook so there's always pressure to make something tasty. This was such an easy recipe and everyone absolutely loved it. My mother-in-law wants me to print the recipe for her. The only change I made was I cooked the chicken in my crock pot and then transferred the broth to a large pot for the pasta.
