My 8 year old daughter made this for dinner tonight!! She has always loved food network and just discovered the Pioneer Woman two weeks ago and she is hooked!!!!! We used frozen peppers and just chopped them up a little and served dinner with a loaf of toasted french bread. Everyone raved about her meal and she was so proud!! She said DONT THANK ME THANK THE PIONEER WOmAN!! She is all set to try the salisbury steak meal!

Just made this soup and even my pickiest child thought it was fabulous. I added a bottle of beer in lieu of some of the stock (I used Shiner Bock - but I am from TEXAS! I also all pepper jack since we like things spicey. Very scrumptious

This was delicious! I improvised a little, by roasting the corn, and I added some left over chicken, that I shredded. It was a big hit, I'm sure that I will be making this again soon!

This recipe is absolutely delicious!! My husband and I enjoyed it immensely. The only thing I added was 3 cloves of garlic minced. I add garlic to most everything, since we like it so much. I will definitely make this recipe time and again.

This was fabulous! I used a small package of frozen corn, thawed for several minutes. I also used all pepper jack cheese. The soup had so much flavor and I couldn't believe how easy it was to make. One thing I would differently is to cook the bacon first until crisp, remove, and add later to the soup. I served it with crusty French bread.
