This was fabulous! I used a small package of frozen corn, thawed for several minutes. I also used all pepper jack cheese. The soup had so much flavor and I couldn't believe how easy it was to make. One thing I would differently is to cook the bacon first until crisp, remove, and add later to the soup. I served it with crusty French bread.

One of my favorite of Ree's recipes. : I'm a vegetarian, so I substituted the chicken broth for veggie broth and left out the bacon. Delicious. I make it every couple of weeks it's so good. If you want to freeze it, leave out the green onion or it will taste bad. I usually leave the green onions out because I usually freeze several containers of it, and I haven't noticed a big loss in taste with its exclusion.

This was really good, although my soup didn't not thicken much. I might have used too much stock. But the flavors were there. Delicious.

Instead of bacon I used leftover ham from our Easter dinner - I also added in 3 cubed potatoes and it was absolutely delicious. Great recipe!

Great soup and easy to make. I would recommend cooking the bacon 1st and cooking it longer. It wasn't done quite enough the 1st time I made it.

It's a HIT! As with most recipes, I followed it to the letter the first time. The ONLY thing I would do different is next time I will crisp the bacon first. I loved it! Another great recipe from The Pioneer Woman. L-O-V-E the show!
