My husband prefers this egg/sausage sandwich on a biscuit or roll or english muffin. We are not Texas Toast fans -- and hey, we live in TX!!!

This breakfast sandwich "hit the spot". Absolutely delicious. I did not have the jalapeno, so I used colby-pepperjack cheese slices instead. You could also use pepperjack cheese slices as your cheese of choice and not use the jalapeno slices. This will become part of my breakfast rotation.

I made these for my family for breakfast and they loved them! I didn't have any Texas Toast so just used sandwich bread and they were great.
