Crash Hot Potatoes

Ingredients
  • 12 small yellow potatoes
  • Kosher salt
  • 3 tablespoons olive oil
  • Fresh ground black pepper
Directions

In a medium saucepan over medium heat, boil the potatoes in lightly salted water until fork-tender, about 12 minutes.

Preheat the oven to 475F.

Place the potatoes on a baking sheet. Using a potato masher, gently press down to mash each one. The tops of the potatoes should be really textured. Drizzle the tops of the potatoes with the olive oil. Sprinkle generously with salt and pepper. Bake until golden brown and crisp, about 15 minutes. These are absolutely irresistible!

Variations:

Place 1/4 pat of butter on top of each smashed potato before baking.

Top each smashed potato with grated Cheddar before baking.

I made them first as the recipe showed and they didn't have a lot of flavor. But I love potatoes so much that I had to try again. Unfortunately, these are just roasted potatoes with the extra steps of boiling the potatoes and mashing each one to look like a crushed potato. I boiled mine for 15 min. and they were a touch over done, they kind of fell apart when I mashed them. They needed a little more flavor. Quick and easy - Different way to serve up potatoes in short time - love it - and modifications can be made to suit anyone's taste. I used gold potatoes and red potatoes. As soon as I saw Ree prepare these I was inspired to try them. We happened to have some leftover new potatoes that had been boiled with crawfish in seafood boil. I used them instead of the boiled yellow potatoes and they came out great. I loved the crispiness from the olive oil and baking! This was a wonderful alternative to just smashing them with butter, salt and pepper. I'm a crispy anything freak! Thanks, Ree!! p.s. Really good! But not unusual. I put a pat of butter on top of mine, as Ree suggests, and yes, the family loved them! They are delicious. But in all honesty, in the realm of potatoes, they are rather ordinary. They get style points for the smashing. I can see jazzing up the toppings for guests.
