Simple. Delicious. I love the fact that these can be made in the morning, and then popped into the oven later, because often my afternoons are busy. Plus, I prefer not to have too many things on the stove at once, so baking is easy. I used 2 lbs yukon gold potatoes, half a stick of butter in the mash, 2 percent milk, and 2.5 oz of Boursin cheese. Boursin is so good in mashed potatoes. I dotted the top with butter and some extra Boursin before baking. The whole family loved these, even our dog who got a small taste.

These potatoes were great and a big hit with my family. I love the addition of the cream cheese, but I didn't use as much pepper as listed as I'm not a real pepper lover.

I showed the recipe to my husband and he questioned the cream cheese. I told him that the recipe got great reviews and we would try it exactly as the recipe read. It was delicious! I, along with others who have rated the recipe, will never make the "old fashioned" recipe again. I am looking forward to the leftovers today for lunch. I love all of Ree's recipes.

My family absolutely went crazy over these mashed potatoes. We have been making the traditional butter and milk potatoes for years but now we will make them like this. My mother called me the next day and said that she was craving them all day long! Pioneer Woman is awesome!

I think these are just about the BEST!!!! Super creamy and super delicious..... OK - yea there's butter and cream and cream cheese in them - THEY ARE MASHED POTATOES!!!! What do you expect? You CAN substitute skim milk and low fat cream cheese and "I can't believe it's not butter" ...... but it's ONCE IN A WHILE PEOPLE !!!!! Have a salad instead - you will NOT get hardening of the arteries by eating mashed potatoes like these - unless you do it EVERY DAY !!!!! Way to go Ree - !!! LOVE YOU AND YOUR SHOW - just bought your NEW cookbook.
