D'lish, yum, yum. I only used 1 pound of pasta, knowing I wanted a creamy wet result. The goat cheese added a nice cream to the sauce. The onions and mushrooms added great flavor to the dish. I served this with Ree's Caveman pops aka roasted turkey legs. OMG what a meal.
My new favorite mac & cheese.

Not difficult, but a lot of work including looking for the specialty cheeses. The cheese is expensive. Bought the exact items. A lot of individual component preparation (bacon, onions, mushrooms, pasta, sauce. Proportions are off; plenty of onion, barely enough bacon, and not nough of the mushrooms after roasting. When I folded the pasta into the cheese sauce it looked fine,but after baking (exact temperature and time the sauce was absorbed by the pasta to the point of dryness; not creamy at all. And the cheese sauce was actually too bland which was odd considering all those different cheeses. I could tast the blue cheese and a little bit of the nutty gruyere but the goat cheese and fontina just disappeared. So I had a very expensive rather dry and not very cheesey huge dish of macaroni and cheese with a few nice add ins. Would tweaking this dish would work better? Maybe no baking? I will be looking to see if someone else will modify and improve.

This was a tasty dish, we omitted the mushrooms however. The texture was extreme gritty and we were not sure which cheese made it that way. This recipe makes a LARGE amount, it was way too much for a family of 5, we had to eat on this for days.

OMGoodness!!!! Ree Drummond did it again! This is ridiculously good!! Love the onions and mushrooms in it. I could have done w/o the bacon and my husband was asking for more bacon!! LOL Men!! (I use beef bacon since we do not eat pork. It is very yummy. I did substitute cheddar for the gorgonzola. Not a fan!! Wow!!

Let me start by saying I watch every show of Ree's and truly love it. I have made several of her dishes and have had great success. However this is just not one of them. This is very labor intensive and many pans to wash after. However it would have been worth it had the taste been there. The dish did not come together for me in flavor...everything in it was delicious just tooooo much when put together. Thankfully I had read the reviews and did not add the blue cheese. The goat cheese, for me, seemed to over power the other cheese flavors. I missed the taste of cheddar with my mac and cheese. There is not one thing that i can say "this is what caused me to not like this dish" it's the combination of all that is it's down fall for me. I loved the mushrooms roasted in the overn and will continue to cook them like that in the future for topping/side on my steak.

This was so delicious; great flavors! It took a bit longer to prepare than I expected but the timing worked out okay anyway. I'm inclined to reduce the amount of macaroni the next time...1 lb should be sufficient. Also while it makes a huge dish if you're serving a large group, I will probably halve the recipe next time since my husband and I are the only ones at home these days and there will still be leftovers for us to enjoy. Thanks! We loved it.

Loved this recipe. Like others I skipped the gorgonzola. I used whole, uncut grape tomatoes in lieu of bacon in order to pretend that made it healthy. The flavor was amazing. I'll make this a regaular.

WOW! This was really great. I made this for friends and they were blown away. I don't even really like mac and cheese and I thought it was great. Since the cheeses are expensive and I have some left over, I am going to make another one and freeze it. Hope it will be just as good!

I too, made it for dinner last night and it is VERY labor intensive (even with the help of my husband. Unfortunately, we did not skip the gorgonzola as we both normally like that cheese, but in this recipe it totally overpowers all the other flavors. What we did find out is that this recipe doesn't need all of the other bells and whistles, i.e., bacon, onions and mushrooms to be one of the best, most decadent mac and cheese's we've ever had. The sauce and the cheese used to make the sauce is so rich and creamy all on it's own. We are both very adventurous eaters but in this case when I hear all of those chef's on tv say that sometimes less is more that's what I think about this mac and cheese. I get it now. So I am going to make it again but omit the gorgonzola, bacon, onion and mushrooms (all of which I love on their own and just make it as is with perhaps a crumbly topping.
