This was a very rich and decadent mac and cheese. After watching Ree make this on her show yesterday I just had to go out and buy all the ingredients to make for dinner last night. I substituted turkey bacon for pork with excellent results and I skipped the Gorgonzola as we are not fond of that cheese. This was a time intensive recipe to make - next time I will prep mushrooms, onions and bacon in advance. To simplify the layering process I mixed the sauteed onions and mushrooms together. My guests raved about this dish, but as it is a high calorie and rich mac and cheese I will likely only make it a couple of times a year. Definitely invest in Gruyere, fontina and goat cheese to make this dish - the variety of cheeses add complex flavor that you can;t get from cheddar! Highly recommend!

This was EXCELLENT!!! I added a little more milk and mild cheddar to the cheese sauce. I will be making this again!

Thank you, Ree. I am very happy that you are back with new shows. The mac&cheese is stupendous! I left the mushrooms out so my daughter would not run screaming from the room, but it was still wonderful.
