    Excellent recipe!

    I used basmati rice. Added 2 cups rice as directed and when it came time for chicken broth I added 3 cups broth (instead of 2. Brought to boil, stirred it once and then covered it and put on simmer for 20 min. DO NOT REMOVE THE LID AT ALL DURING THAT TIME. After 20 min remove from heat and keep the lid on for another 10 min. Perfect rice. Not sticky and perfectly cooked. This was amazing rice!! And very easy to make!

    Recipe is great but it took twice as long to cook the rice and i needed extra chicken stock. otherwise its great!

    Wonderful recipe! I used brown rice so it needed a bit more cooking time and liquid. Very fresh and light flavor, pairs wonderfully with any Mexican dish which tend to be a bit heavy. Definitely a keeper.

    I liked this, but it was wayyy too "limey" for my family. The limes I had were the large limes and extremely juicy. I only used the juice of 2 limes and the zest from one . . . but the flavor was still overpowering. I think in the future, I would have the limes on hand - but would start with only one lime and then taste the rice to see the if the juice from one or two more limes was needed after the rice is done [but still warming]. I really like the technique and other flavors Ree introduced in this dish. I will repeat again, just taste before adding the rest of the lime.

    Great alternative to plain everyday rice. The flavors blended well together and was in no way overpowering. But I did only use two limes. It was a great compliment to the enchiladas.

    This rice is delicious! Love the lime flavor and it went very well with the simple perfect enchiladas. We love cilantro, but basil sounds good to. Definitely a keeper!
