My husband and I just loved them. According to him, they were the best pancakes he'd ever had....me too! They were very easy to make and had just enough tang from the lemon. I used the evaporated milk and didn't experience the thin-batter issue at all. They were perfect! Ree, we just love your show....so glad you're finally with the Food Network....one of our favorite shows to watch! Keep up the good work and keep those great home-cookin' recipes coming. Can't wait to try the Blackberry Cobbler. YUM!

Pancakes were great! Good recipe. Pancakes were good/ light and blueberries added fresh and fruity flavor...way better than using a mix out of a box.

Everything the Pioneer Woman makes gave me motivation to cook again. I just made the Lemon Blueberry pancakes and my husband and I are crazy about them, two of our favorite flavors,lemon and blueberries! I didn't substitute any ingredients and what a difference from using "pancake mixes" all these years. It wasn't that much more work and so worth the time. Thank you so much! Hubby thanks you too!

I love this recipe and have been making them all summer long since I found these pancakes on her blog! I didn't have evaporated milk on hand so I substituted honey greek yogurt and they turned out great! Added a great zang to the lemon and blueberry!

I love this recipe. if you use the cake flour as called for it will thicken up perfectly.
I have been a fan for years and have her cookbook. I am looking forward to seeing more of her shows.

These pancakes were FABULOUS!!! I have been a loyal follower of her blog for several years, own her cookbook, and I amd so excited to watch her every week. Hands down, Ree's show is my new favorite on Food Network. No, the recipes that she has made so far are not 'healthy' but she definitely has some other options (she calls healthier foods 'Cowgirl food', so give her a chance.
Back to the pancakes--they turned out perfectly. I didn't experience the thin batter issue at all, and they were delightfully lemon flavored and cooked beautifully. My family devoured these. Thanks for a wonderful addition to our cooked breakfast rotation! I can't wait to make these for my church group ;

Delicious! The recipe needed all the liquid indicated. Once the batter sits for a minute or two, it thickens up perfectly. I've enjoyed your blog for several years - nice to see you and family in person, Ree. I make your French Onion Soup routinely!

Awesome!! Batter at first seemed a little runny- but they cooked perfectly. This is my new favorite pancake recipe. The lemon and blueberry combo was so good.
