    Great recipe. Probably the best mexican rice I've ever made (and I've tried quite a few times. I cut the recipe down to 1/4 size so I could make with just 1 cup of rice. Even with that it made enough for 6 as a side dish. I didn't have Rotel so I used Diced Mexican tomatoes (with jalepeno and cilantro, and some diced green peppers which I think is a pretty close approximation of the Rotel. On top I used pepper jack instead of the cheddar. It came out looking great, and tasting even better than it looked. Even my rice hating buddy thought it was awesome.

    Made this to go along with the tequila chicken! It really was easy, fast and really tasty! The left overs were served the next evening with grilled fish nd was excellent as a left over! Thanks for another great recipe Ree!!

    Made the dishes from the entire episode and was not disappointed in any of them. The only think with the rice is I will cut it in half next time... 12 servings is a lot of rice!!

    My husband made this dish as part of our dinner last night. SO delicious! He did modify it a little bit by using fresh diced tomatoes instead of canned whole tomatoes. I love this recipe!

    WOW! This was sooo easy, especially for how filling and tasty it was. The only negative if you can even call it a negative was the amount this made. I cut the recipe in half and it still made a giant pan full. I fed 4 adults and we still had more than half the pan left. That's O.K. tho, cause we will have plenty for lunch tomorrow. Eat up guys, this ones a keeper!

    Love, love this rice! Thank you Ree! I look forward to all of your shows! You are so beautiful in so many ways! This rice was very tasty, I cut up tomatoes from our garden, about 2 cups, used only about 3 cups of rice and that was a lot of rice! I also used 1 can of the rotel tomatoes and 1 small can of tomato sauce, I only sprinkled some cayenne in the mixture and I used extra turmeric and cumin! Very good when finished in the oven!!!

    I halfed the recipe and it still made a lot!!! Used a 14oz chopped tomatoes and one can of rotel with two cups of rice and one quart of chicken broth. The rice was delicious and very easy to make. We will definitely be making this again.
