I like vodka, but the amount of vodka in this recipe is overpowering. This was a disappointment.

I have never taken the time to rate ANYTHING but I had to get back online to rate this recipe. I followed the recipe to the tee but simmered the vodka for about 10 minutes. It was delicious and my entire family enjoyed it, even my 2-year old. It was so full of flavor and the recipe made the perfect amount of sauce for a pound of penne. The vodka flavor was just right. I marinated chicken breasts with vodka, water oil and Italian seasoning then grilled it. It was a great addition if you're looking for extra protein. This will become a regular dish in our home. Thanks Ree! Love the show too!

I made this last night for dinner, it had way too much vodka in it. The vodka flavor was overpowering. I used a little less than 1 cup and it was still too much I also cooked it longer in hopes that it would cook out some. I added mushrooms and fresh asparagus and that didn't even help round out the flavor. Other than that I followed the recipe to a T. Vodka chicken is my favorite dish at a local Italian restaurant so I know that I love the sauce if done right. We were very dissappointed with this one!

We had this for dinner tonight and it passed the test. Teenager, toddler and husband all liked it. I did modify a little. I added some italian sausage and diced bell pepper and cut the vodka to 1/2 cup and cream to 3/4. It was excellent. Will definitely make it again!

The ingredients were great but the portions seemed way off for what I'm used to.
I doubled the tomato and halved the cream and vodka and it came out perfect. My NY'er approved so that was enough for me to know it came out great!

A big success with my family. After reading some of the reviews, I did reduce the amount of vodka slightly (just down to 3/4 cup and simmered it off a bit longer (5 minutes just to make sure the alcohol wouldn't be problem. The taste was still fantastic. Easy to make and definitely a new dinner favorite on busy school nights.

I used to make a version of this all the time. A splash of vodka at the end of cooking really does add a nice peppery bite. I would never make this recipe as written, especially now that I am pregnant. 1 cup of vodka is a lot, and when added at the end of cooking, with the heat on low, it doesn't adequately "cook off." I would be afraid of exposing my family and developing baby to the alcohol content of this.

Edit: Just to elaborate. There are almost 6 "shots" in one cup, so this recipe is almost one shot of vodka per serving. If you google "alcohol cooking retention times"it shows that at least 50-85% of the alcohol will be retained after the cooking time stated in the recipe. That is still at least 1/2 a shot of vodka per serving (more likely a full shot if you have large servings.

Another great dish when one is in a hurry/how funny though that some actually think the vodka would stay with the recipe and not cook off... well I guess we all thought that when we first began our foray into cooking. A salad and crusty bread and a good red and the meal is complete....

I've made this before. Too much booze for it to be family friendly.
