    Yum Yum Yum. I added Sriracha to my dip b/c we like spicy but this is THE way to make fries in our house from now on!

    My husband said they were the best fries hes ever had. I do not fry much and have never bought peanut oil before. I cut the potatos ( that came from my gardeninto steak wedges careful to keep them equal in size. Fries were light fluffy and crispy, not greasy at all. Time well spent on a rainy night.

    As stated by broomist, 2 stage frying of potatoes is the key to fries that are crispy on the outside and almost creamy on the inside. I especially like the benefit of 2 stage frying when doing fish and chips. First the potatoes (Chips are fried, then the battered fish, then the Chips again. Potatoes after the fish "clean" the frying oil so you can use it again without any fishy taste.

    Too much fussing. I have gone through these steps and I don't think it does anything except use up paper towels and mess up the counter. I found no difference in the flavor. Frying them in batches is a pain.

    My Mom taught me to make french frys this way over 50 years ago!! The only way to make truly good french frys.

    The 2-stage frying really is the secret, and so often overlooked! I spice up my "fry sauce" with a little diced habanero, but otherwise I'd not change a thing!
