Worth the extra effort! This is the only way to make homemade fries in my opinion.

Made these last night for the first time to go with our hamburgers and hot dogs. They were delicious!! They took a little longer to soak, dry and fry twice but sooooo worth it! I don't fry much because it doesn't usually turn out, but these were perfect!! Definitely worth 5 ***** stars!!

Best homemade fries ever! It takes longer than just throwing the frozen French fries in hot oil, but well worth it. Thanks Ree!

I absolutely love this recipe for Ree's Perfect French Fries. I love it so much I had to try freezing them. It works great! Just follow Ree's instructions perfectly up THROUGH the first frying. (I did leave mine in the frig for 24 hours. Once fried the first time, pat them dry with paper towels to remove the excess oil from frying and cover with the towels you patted them dry with so they don't dry out. Let cool completely and put in freezer safe bags. Waalah! You have better than store bought frozen french fries ready to deep fry in an instant. I had to try this when one of my local markets was selling their russets for 10 cents a lb. I bought 20lbs and started peeling. And no, I didn't find the cutter she used on the show, but I did get one of the stainless steel ones that works perfectly for the skinny fries that I like the best. Now I have Ree's Perfect French Fries any time I want them without having to go through all the preparation each time.

The French fry cutter she was using (the white box one was a vegetable chopper from Williams-Sonoma.

The french fries turned out nice and crispy. I think the key is not to overcrowd the oil.

I had never fried anything in my entire life, I hate the smell of grease, but I just had to try these... and they were delicious. Now I've got three fans going trying to get rid of the smell, but it was totally worth it. Awesome fries!

Love these! These are the fries I'd love to eat all the time! I would love to know what type of french fry cutter she was using..I hate having to cut by hand or tug the potatoes out of the cutting grid, ..want more fries!! ^_^
