I have neither like pot roast- meat has always been stringy. This is the BEST pot roast EVER! I have fixed it three times now (two times adding potatoesand always in a cast iron dutch oven. I have always used beef broth as my liquid with great results. We do like it best on teh second day.

I browned the onions, carrots, potatoes then put them in the crockpot. I separately browned the chuck roast and placed in the crockpot. I placed all the other ingredients in crockpot and cooked low for 8 hrs and it came out perfect! Delicious! Thanks

This recipe was simple, delicious, and my family absolutely inhaled it! The fresh herbs made the difference. The only change I made to the original recipe was that I swapped out the rosemary with tarragon.

This pot roast is very good and I really like the addition of the fresh rosemary and thyme. They bring another level of flavor to the finished roast. The only thing I'll do different next time is add more salt along the way. It definitely needed it.

Fantastic flavor and super easy! The hardest part about making this pot roast is waiting to eat it! Be patient and let it cook until it starts to fall a part and not any sooner! It is well worthy the wait! enjoy~

We had this meal as one of our Christmas week dinners and it was a giant success. I don't think we haxe followed a recepie for a roast in years, but I am certainly glad we did this time. My daughter-inlaw even wants a copy. Try it you will not be sorry.
