    I made this Pot Roast & the Creamy Mashed Potatoes for Sunday Dinner. First time making both and had 8 happy tummies. Thank you so much!!! Yes to optional Cabernet red wine, Garlic & Mushrooms. Also added 3 stalks Celery (green part with strings removed that others recommended. Totally agree with caramelizing Onions & Carrots (15 min or longer at same time. Move over at end and add 2 Tbsp. butter to sauté 8 oz. thickly sliced Mushrooms in same pan. Add 1 Tbsp. minced Garlic during scraping process just before Chuck meat & veggies added back in with Beef STOCK. I added 4 Tbsp. Cornstarch to pan juices at end to make gravy. No need to pray while waiting to finish cooking. PW gave us everything we needed to get both recipes fabulous the 1st time.

    I've made good pot roasts and I've made bad roasts. The pot roast from this recipe was by far one of my best. Does anybody know where the recipe for the brownies can be found? I checked her blog but couldn't find it.

    This was very easy and delicious! Put it together before the football game and had a delicious meal of pure comfort food waiting for us at dinner time. The only thing I will change next time is to use a 1/2 cup of red wine instead of 1 cup, and then increase the beef broth by a 1/2 cup, as it was a little strong flavored for some in my family. I'm not a big beef fan, but I will definitely be making this recipe again!

    Was easy & good with egg noodles. I used a venison roast, which was a little lean for this recipe.
