For me a nice change from my usual crock pot recipe and I am not a potato fan at all so the absence of potatoes in the pot roast did not bother....Like the idea of browning the veggies as well as the meat. Not sure how some had mushy veggies if cooked the right amount or time and temp.....
I might add that some seem to not care for the recipes by RD yet they continue to make the different ones and then speak ill of them....seems a bit silly and disingenuous... all of those experts should pitch your own show and see if you can then enlighten others....just saying

I've made this for the last year after seeing it on her blog. Finally, I can do a pot roast that everyone likes! We like carrots and onions so we add many more as well as fresh sliced mushrooms. Go ahead and add whatever veggies your family likes. Perfect for putting into the oven before leaving for church and having a delicious meal when you get home.
PS - This is ALMOST as good as my parents' Sunday pot roasts that I remember from 50 years ago.

I can do without the carrots (gives it a sweet taste and the rosemary herb is not a favorite. I am with ezgrandma..."the meat flavor stands on its own" and with the onions. I always brown my onions too,...but the rosemary changed the wonderful flavor of pot roast. I also use flour.

Very good and oh so tender! I agree with serving mashed potatoes instead of cooking the potatoes with the meat. I think this is going to be one of my favorite shows.

If you watched the episode, she states that she serves it with her home made mashed potatoes on the side. However, I feel adding brown gravy would help. You could add more vegetables I believe it is a preference. It is your basic roast beef recipe. Loved it!

I've never been a fan of pot roast. It's something I've made for my husband and sons because they like it. I tried this a couple of years ago when I saw it on PW's blog and I was amazed. Although most pot roasts have chunky vegetables, I prefer to have mashed potatoes with gravy and this makes superb gravy. The first time I made it, I used carrots. While I like carrots, I didn't like the flavor the carrots gave to the gravy so since then I have omitted the carrots and in my opinion, it's much better. We also prefer it without the herbs. Basically, it's just a good marbled chuck roast, onions, salt and pepper and beef stock and I think the meat flavor stands on its own without any additional flavorings and seasonings. After the roast is done, I thicken the gravy with cold water and flour. In my opinion, there is nothing bland about it. This pot roast is now on our list of winter favorites.
