Ingredients
  • Meat Mixture:
  • 1 1/2 pounds lean ground beef
  • 1/2 cup seasoned breadcrumbs
  • 1 tablespoon ketchup
  • 2 teaspoons dry mustard
  • 4 dashes Worcestershire sauce
  • 1 cube beef bouillon, crumbled (or powdered beef base)
  • Salt and pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • Gravy:
  • 1 whole onion, halved and thinly sliced (or diced if you prefer)
  • 2 cups beef broth, more if needed for thinning
  • 1 tablespoon ketchup
  • 1 teaspoon seasoning sauce, such as Kitchen Bouquet, optional
  • 4 dashes Worcestershire
  • 1 teaspoon cornstarch, optional
  • Salt and pepper
Directions

  • For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.

  • Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.

  • For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.

  • Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

This dish is easy to make and taste great.  I changed just one part of the cooking.  I browned the meat in a skillet and transferred to a baking dish and put in a 375 degree oven.  then i made the gravy and poured it over the meat and put back in the oven for 15 to 20 minutes more.  Time was the reason I did it this way and it came out realy good. item not reviewed by moderator and published

Great basic recipe with a nice flavor twist. I did prepare the gravy a bit differently, though. I removed the steaks from the skillet to drain (the beef I use is locally processed and 'very' lean so had very little fat remaining.) I tossed in the onion and some leftover bella mushrooms from last night's dinner, salt/pepper. Let that saute until veggies were tender then sprinkled about 1/4 cup flour. Let that simmer for a minute and added water slowly until just beyond the thickness I like my gravy. I adjusted salt and pepper and added a Knorr beef bouillon (the big ones) then added the ketchup and <span>Worcestershire. Let that cook a bit then tossed in some freshly picked and chopped parsley (trying to use it all before it freezes) then let it simmer until it was the perfect thickness. I made this last night.  It was very good, but even better today.  The one difference I had to do is add a bouillon cube to the gravy to had a bit more flavor (I didn't have Kitchen Bouquet).  Served with mashed potatoes and a veggie.  Also, I just received Ree's new cookbook and see that the recipe is in it.  Only thing is the recipe in the cookbook calls for 2 tablespoons heavy cream, and the meat mixture did need some moisture added to it.  I took it upon myself to add some milk and am glad I did.  The recipe here on the site does not have the heavy cream in it.  Will definitely make again.  I have yet to fix a recipe from Ree that I didn't like.<br /> item not reviewed by moderator and published

Another terrific recipe from Ree!  I used Italian breadcrumbs b/c that's what I had on hand, 1 tbsp beef granules (didn't have a beef cube) and 1/2 tsp each of  salt and pepper for the meat mixture.  I also put the patties in the fridge for a few hours to firm up, they tasted great.  As for the gravy, I added a couple of sliced mushrooms, and used sodium reduced beef broth.  I did not use Kitchen Bouquet or more salt, pepper only.  We still found it bit too salty for us so will adjust next time.  So easy to prepare and a delicious flavor.  This recipe made 6 patties.  Will definitely make this again! item not reviewed by moderator and published

Firstly, say I'm not a novice cook.  What first appealed to me about this recipe is that it would make a lovely seasonal (fall) type dish that my husband likes.  This was a culinary disaster and shame on me for not picking up on the details.  The meat would not hold together...hello no egg to hold the mixture together.  I added garlic to the meat mixture for extra flavor.  The sauce was the most bland, unflavored disaster I have encountered in some time.  I had to add everything I could think of in my pantry to add some flavor to a sauce that basically tasted like "nothing".  Do yourself a favor and research identical recipes so that you can compare and avoid totally this culinary disaster.  Bob Evans Restaurants probably have a better tasting dish and you can eliminate the aggravation!  item not reviewed by moderator and published

Wow this dish was really good! I never made homemade Salisbury steak before and I was concerned this would taste like a hamburger or meatloaf, but it didn’t! It was like the restaurant version of the frozen kind I loved as a kid. I followed the recipe to the tee. I bought a nice, big sweet onion to use instead of the small yellow ones I usually have on hand and I think it added a nice flavor to the dish. I think browning the meat in the butter/oil combination really helped brown the meat and give it a nice texture and the patty was moist and delicious. I did add gravy master to my sauce because I had it already, but don’t buy it just for this recipe. It’s not a necessity. I want to also note that the sauce at the end is a true “sauce” like Ree mentions in the video and not gravy. If you are expecting something like thick, brown country gravy, you might be disappointed. But the sauce was spot on, thick and syrupy just like I remember. I have made this recipe twice in the past month and it is fantastic. Buy a good quality ground beef at your local butcher if you can. I make more gravy and serve it with no yolk noodles! This recipe is awesome!! I did, however, make a few substitutions. I made my beef stock with 4 bouillon cubes in 2 cups of water. I substituted the beef bouillon granules with 1/2 pouch of Lipton Dry Onion Soup Mix and added the remainder of the pouch to the beef stock. Instead of Kitchen Bouquet I used A-1 Steak Sauce. I made this yesterday for supper. I had been watching the episode of the show where you made this and my husband was thinking it would be great. I had to make some changes for it to be dairy free since my baby can't have dairy so I can't either. I substituted old fashioned oats and Italian for seasoned breadcrumbs. Used homemade turkey broth instead of beef because beef had dairy in it at the store. Didn't use beef bouillon since couldn't find without dairy added a little soy sauce and omitted the butter. I have made this several times with ground turkey. I add a packet of Lipton Beefy Onion soup mix to the bread crumbs and other ingredients that are mixed into the meat. I also use chicken broth instead of beef broth. This recipe was great, full of flavor! I made a few technical errors during the preparation (I wish I had cooked the onions down further for one), but the end result was great. Because others seemed to have issues thickening the gravy, I used a roux of flour &amp; butter instead of cornstarch and it thickened up no problem. I did everything else by the book. OMG this is the one!! I have been searching for a Salisbury Steak recipe that sounded good and after reading reviews on several recipes I was about to stop searching until this one! This was not only super easy but it was soooo delicious! It was a HIT with my 3 year old, he even wanted seconds!!! The only thing I did different was I used the Lipton Beefy Onion soup mix mixed with 2 cups of water because I did not have any beef broth. Loved this and it only got better as leftovers. I left out the mustard because I don't like it but I love how she seasons the beef so there is lots of flavor. The gravy was great! I've only had Salisbury Steak in the frozen dinner form. I never knew anyone who made it from scratch or even what ingredients would be in it to give it the unique flavor it has. When I saw you make it on Pioneer Woman, I couldn't get it off my mind. Tonight I made it for my family. What a hit!!!!! My husband said it was definitely one of the best dinners, along with mashed red potatoes, sauteed green beans with garlic, and a homemade banana pudding for dessert. Love this recipe! I did add some egg whites to the meat because I felt it needed a binder. I also added 1 tbsp. of cornstarch as I like my sauce thicker and I don't add butter to the pan...just think its unnecessary fat and calories. Should be called "back in the day salsbury steaks" My mom always cooked with kitchen bouquet and some worcestershire. So it was like going back in time. However, now I cook for mom, and she needs to cut her sodium drastically, due to a heart problem.So I use low sodium worcestershire and reduce the amt. by half .I also use NO sodium beef stock and add in 1 envelope of herbox no sodium beef boulion to both the meat and the sauce. Like many others I add in 1 egg. Instead of adding in bread crumbs, I sub 1/2 C. ground oatmeal (I just wiz in a blender till fine) It adds a tiny bit of whole grain fiber and no sodium. Like others, I add in mushrooms and garlic. Mom thinks this is her recipe, and she said it is the one thing i did not take the salt out of.....Shhh. what she doesn't know won't hurt her..An awsome old time recipe. no...unless you ground those steak peices, it wont be the same...also the cooking time will be different and basically you will be eating steak with sauce...you can make it with ground beef, pork, turkey, chicken, deer, moose...but all ground and of course the flavor and texture will be different.
