    I loved this carrot cake but I though the amount of sugar both in the cake and frosting is a little insane. I did it exactly as it was and next time I think I will substitute one cup of white sugar for brown sugar in a cake, and put a little less in frosting as well.

    This is going to to sound crazy, I used this recipe to make a banana bread.....yes banana bread. I was looking for a recipe I could use that I had all the ingredients, I did have carrots but I had some nasty looking bananas so they won out. I used 4 mushy bananas and I added 1/2 cup of flour more. This was the BEST banana bread I have ever made. I'll be making the carrot cake next week.

    This carrot cake was awesome! I pureed an extra 1/2 c of carrots and combined it with 1/3c of sour cream and added it to the cake mix. This made the cake extra moist and more carroty! : Great and verrry easy recipe!

    This was the BEST carrot cake I have ever made....The taste and texture was wonderful... VERY, VERY MOIST...will always use this recipe..

    This is the best Carrot Cake ever. So easy to make. The icing is fantastic! Can't wait to eat this again!! Used walnuts instead of pecans, just a personal choice! Yum, yum, yum.

    I had never made a carrot cake before but when I watched Ree make it in a tube pan, I was hooked. My hubby had a birthday the next week and wanted one made for him! It was the best cake (of any kind we had ever eaten! My extended family agreed. Now my hubby wants one every year...so a new family tradition begins! Thanks Pioneer Woman!

    My sister or I have made this cake about 3 times since I came across the show demonstrating this cake. It is easy and delicious, and this cake is definitely a winner! I did do something a little different, I used nuts in the cake batter instead of putting them on the outside. Didn't change anything. Great cake!! Thanks Ree, my sister and I love your show!

    This is a great easy recipe. I made it the first time for my husband and boys and they LOVED the flavor. I told them it was super easy to make and my boys took it upon themselves to make it three more times in less than 2 months, tonight being the third. I love recipes like this that will get the kids cookin'! Love your show Ree, you're so REEal!
