    My husband and I saw this episode and decided to make the carrot cake together... It was easy and fabulous! It's a keeper.

    Very Rich!!! Yummy cake!!! I added one teaspoon of pumpkin pie spice to the cake mixture along with the cinnamon. For the frosting, I toasted the pecans and I added zest from a mandarin orange. This recipe is definitely a keeper.

    best carrot cake ever. have made this many times since the original post in 2008. it's always a big hit. and the frosting, i can't even begin to explain how awesome the frosting is.

    In the 60's, I made a carrot cake (no icing similiar to this one and have not been able to find my recipe. It was darker, but the very moist texture is the same. Next time, I will double the cinnamon to make it a little darker and to enhance the taste. This will become my only carrot cake recipe. I like to use a tube pan, with the removable insert. I cut it into fourths or halves right after I remove the slightly cooled cake on the insert. Then I put it back together on the plate. One last thing: I am not against making a bowl of cream cheese icing for those who want it. I could eat the icing with a spoon!

    This was delicious. Very moist and so easy. I used applesauce instead of oil, as suggested by another reviewer and it turned out great! My fiancé has been eating it for breakfast, he loves it!

    Oh so fabulous! I used a cup of applesauce instead of the oil. Cuts calories and everyone still loves it. I agree w/ Ree that this cake should be given as gifts to your best friends, freshly iced as it is very dangerous to keep in house...for the waist line, that is. I had it for breakfast this morning and what a way to bring in the day! :D Such a keeper of a recipe.

    Just made this cake and my husband says it is the best carrot cake he has ever had! Super easy to make. I followed the directions exactly and it came out perfect! I will definitely be making this again. This is the first recipe I have tried from Ree and I will definitely be trying some more. Thanks for sharing!

    very good carrot cake. It has a unique texture. Moist in the middle and there is kind of a sugary crispy crust on the outside of this cake. My family loved it!
