    These were very good enchiladas. However, there are a lot of steps and my kitchen was a mess. I have a small kitchen too so I ran out of room. I think if you have a large kitchen and a lot of room to work, these might be easier to make. They were still very good enchiladas, I just think I may look for a simpler version in the future.

    REE REE REE! REEEEEEEEEEE! This recipe is so so so good! Omg! I followed the directions exactly except I substituted the ground beef for ground turkey and the corn tortillas for whole wheat tortillas. I also used shredded chicken breast (half of my dish enchiladas w/ ground turkey mixture and the other half was a shredded chicken meat mixture. I also sauteed diced jalapeno peppers with the onions in the ground turkey. Oh wow :......This recipe deserves 10 stars! Forget Simple Perfect Enchiladas....these are PERFECT ENCHILADAS! YUMMY!

    Oh My God Ree, this is a terrific recipe! I made these enchiladas last night and the only thing I did different was use shredded beef (from a pot roast I slow cooked and my husband and I thought we died and went to Heaven! I have made enchiladas a million times but never added the diced green chilis, olives and green onions inside the enchilada!! It really gave it more pizazz and this will forever be our new, favorite enchilada recipe! Thanks so much!!

    These were delicious! They weren't as time consuming and messy as some of the reviews said either. I added garlic powder to the sauce and fresh garlic to the meat, I Los sautéed the chiles with the meat. I served them with avocado slices, tomato and our cream as well.

    My wife usually doesn't like ground beef enchiladas but Ree's looked really good and simple to make. When I placed them before her, I said, "Just try them; you like The Pioneer Woman!" and she gobbled them down! There are only two of us so I am happy that we have several leftovers for both of us to enjoy and pig them down. Thanks, Ree!

    After seeing Ree make these on her show, I decided to try and make them myself. I've never made enchiladas at home before, but these were really good. Will I make this exact recipe again? Probably not, and here is why. It's not that I didn't think this recipe didn't taste good, I just felt that there were some extra steps that didn't seem necessary (in my opinion and were time consuming especially if you want to get dinner ready quick. I didn't really see the point in adding the chicken broth to the enchilada sauce. I also didn't understand why you needed to fry up the tortillas in oil either. Is this a common thing to do for enchiladas? I don't mind spending extra time in the kitchen for a recipe that knocks my socks off, but this one didn't seem worth all the time and effort. I still plan on checking out some of Ree's other recipes though. :

    I had left over pork roast which I turned into a carnitas type filling instead of the ground beef and it was delicious. I've made many different enchiladas with many different types of fillings and recipes-to the point where my husband makes a face when I tells him enchiladas are for dinner. But these he really enjoyed! Messy prep and makes a lot of dirty dishes. Worth it, though!

    These enchiladas were very tasty. I used flour tortillas instead of corn because the corn were too small. It still turned out great. Also had some chicken leftover and made some with chicken. Great recipe to make hours before you need them and then only have to heat when ready.
