Have made this twice already. Have used beef, turkey, and plan to use shredded chicken next. Easy to make and yummy. Use plenty of cheese inside and on top.

I always avoided enchiladas that called for the red sauce because the taste of it was too overpowering. But with this recipe it is perfect!! This is now my goto recipe for enchiladas. Thanks Ree for the recipe.

I love this recipe..Just remember once out of the oven if your using corn tortillas. Do NOT cover them to try and keep them warm. It just becomes tamale pie..which is o.k..but, if it's enchiladas your after..bummer

This is a really tasty recipe!! It's kind of messy and dirties pretty many dishes so it won't go into the weeknight rotation, but will definitely make these on weekends! I was in a hurry at the grocery and picked up picante enchilada sauce instead of mild, so I left out the green chiles. Will pay more attention next time!

Made this last night & it was great. Of course you can always adjust seasonings to your taste. I made my own enchilada sauce a recipe from the internet. I will be making again!

This is one of my boyfriend's new favorite meals! He was very impressed. And there's always enough to freeze for future weeknight dinners. The enchilada sauce options at my grocery store were mild and hot. I chose hot, which really made the dish perfect for him (a Texan, though it was a bit spicier than I'd like. Maybe next time I'll combine half mild and half hot to make a medium enchilada sauce.

Not getting all the rave reviews. This recipe is very time consuming for the end result which my family found just okay. I didn't find this appetizing enough to repeat again.

These were great and a step towards our kids enjoying the flavors of enchilada's. The sauce was very mild and easy for them to eat.
