Slice open the limes and squeeze the juice into a food processor or blender. Add the tequila, olive oil, salt, garlic, jalapenos and cilantro. Blend the mixture until totally combined. Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight.

Remove the chicken from the bag and grill it over medium-high heat. Rotate the chicken 45-degrees on both sides to create nice grill marks, and continue grilling until the chicken is cooked through, 4 to 5 minutes per side.

Melt the Monterey Jack over the top of the sliced chicken breasts.

Slice the chicken and serve it on a plate topped with the sides.

Did not do a single thing for the chicken breasts. However, I have tried 4 different tequila-lime chicken recipes, it is the same with all of them. YOU MUST TRY THIS RECIPE!!! I gave this recipe 4 stars ONLY because I improvised so much and was not able to follow the recipe exactly. I only made 2 chicken breasts and had to guess on the correct ingredient measurements, substitued cheddar cheese for the monterey jack, didn't add jalapeno, only marinated for 2 hours, and baked the chicken instead of grilled. Even with all these changes, the chicken still came out moist and delicious. I even made this specifically to take to work as leftovers the next day. I didn't even taste it when it was hot out of the oven, so taking all that into consideration, I think if I had followed the recipe exactly, this would definitely have been a 5-star recipe. made this for dinner tonight as fajitas with side fixings of guacamole, sliced avocado, pico de gallo, sour cream, shredded cheese and Ree's Cilantro Lime Rice. WoW the flavor in this chicken was great! Even my husband enjoyed this dish and he's not much of a mexican food eater. He wants this to be a lunch favorite while vacationing on the islands. I'm wondering if it will work better with thinner chicken pieces so the marinade can reach more chicken surface. Fantastic flavor - very authentic! Since I was serving these to my kids, I substituted a diced poblano pepper instead of the jalapeno, but I didn't detect any heat at all, so might try it with full heat next time. I saw Ree's show this week and was looking for a way to make my chicken for a big BBQ. I thought this was simple enough, so I gave it a try. I ended up using thin sliced chicken instead of whole breasts. This worked GREAT. I marinated for about 4-5 hours before putting the chicken on the grill. I also didn't have a chance to get the cheese on them because I got busy with other things and it got missed in all the action. The chicken was still really tasty without the cheese and all of my guests who had some of the chicken said it was outstanding. I will say that one jalapeno gave nice flavor and not a lot of heat and I was ok with that because we had a lot of kids. If you like more heat, then either keeps the seeds in or add more jalapeno or maybe sprinkle on some cayenne pepper.
