I would give this recipe 100 stars if I could!!! My husband and I LOVE chicken tortilla soup, and this was the best we've had so far! And it's true, you can make it as hot or mild as you want! AWESOME! :

We love this soup! It's easy to make, hearty and delicious. You can make it as hot or mild as you want it and you can get creative with add-ins and toppings.

So delicious! I had some leftover shredded chicken in the freezer which I used to make this soup. I also added a little extra fajita seasoning for an added kick. This dish came out so flavorful and so comforting! I will absolutely make this soup a part of my usual collection of dinner options!

Delicious, and a great way to use leftover roasted chicken & vegetables. I made a stock using the meaty carcass and vegetables (carrots, onions, fennel. The residual sweetness from the caramelized vegetables (strained out of the stock added a really nice dimension.

This recipe was just what I was looking for after I recently had Chicken Tortilla Soup at a restaurant. I have to say, this tasted even better than the stuff I had at the restaurant! I did a few things differently, but nothing enough to drastically change the recipe (I rubbed chicken tenders with "chicken taco" seasoning and then cooked in a pan in some olive oil on the stove-top, then cooled and shredded. I also used a 4 oz. can of diced green chiles instead of fresh, added 1 t. each of cumin and chili powder and a handful of frozen corn. This was easy and delicious!! A definite keeper that I'll make again and again!

Easy & delicious! improvised a few ingredients. Used canned pinto beans instead of black, added cumin and chopped up pickled jalapenos instead. Also, fried up my own tortilla strips and added on top! would definitely make again!!

jus finished eating it! with this recipe u can never go wrong. so easy so good, u can add whatever or alter stuff n still gonna come out great. i added corn, additional can of black beans, lil bit more chicken, also used stewed tomatoes(couldnt find the one in recipe, added some green bell pepper with the halapinios. all was great but the real kick came from 1.5 spoon of cumin, half corriander powder n half red chili. at the end didnt grill tortilla used tortilla chips n topped my soup with shredded cheese n sour creme, that gave me an explosion of flavors n really big smile :

This was my first attempt at Chicken Tortilla Soup. It was so easy and SO GOOD!! I used 6 boneless/skinless chicken tenderloins that I marinated and baked for 20 min @ 375F - shredded it once it cooled a little. I also used about 4 1/2 cups of chicken stock and two 15 oz. cans of fire roasted tomatoes - and added about a cup of frozen corn. I opted to used crushed tortilla chips instead of the grilled flour tortilla, for a little extra texture. I also substituted the jalapenos for poblanos so my children could have some. 10 yr old LOVED it...even the 5 yr old who won't eat veggies raved about it. So easy to adjust to your tastes - this one is a keeper!!
