The lime juice in this MAKES the recipe. I love that it is such a quick make! FABULOUS.

Delicious! I did throw in a can of corn and 2 cups of pinto beans to add some fiber. I also did what other reviews suggested and added cayenne, cumin and chili powder. I made it last week and added two jalapenos which i found out were a bit spicy, but it did not ruin the dish. It was great and I am making it again this week and using 1 jalapeno (unless its a weak one. This one is definitely a keeper! Oh yeah I LOVED it and my husband did too!

I made this soup and while it was delicious I thought it needed a little sprucing up. I researched a couple other tortilla soup recipes and modified this one just a little. I added 1 can of whole kernel corn, 2 tbs of cumin, 1 tbs of dried oregano, and 1 can of red enchilada sauce. I thought it was great, just in need of a little more flavor.

We have big family, so I stretched the recipe a little for our size & taste preferences. I added one can of dark red kidney beans and drained them with the black beans. I added a can of Niblets, an additional can of chicken broth, I cut the jalepeno & only used 1, but I added a little chili powder & cumin. And, I substituted tomatoes with green chilies for the fire roasted, but added a dash of liquid smoke. Like some others, I just squeezed a lime over the whole pot instead of serving with a lime wedge. I used used 4 chicken breasts, since we have a family of 7. We served with tortilla chips & guacamole and topped with a blend of cheeses--asadero, jack, chihuahua mixture. Delicious.

I cooked the onion and garlic in a pan first then threw it all in a crock pot, added lime and cilantro at the end- and it was perfect. Leftovers are even better, so a good make ahead meal for company.

We LOVE this recipe (although we have altered it slightly to make it our own :-. We like a thicker soup, so we add an additional can of black beans and some frozen corn (from the garden. Also, for the lime, we just squeeze one whole lime into the soup and don't bother with garnishes--it is fine the way it is. What a wonderful recipe, so glad to have found this--we use it as part of our regular "rotation."

Great start to a delicious soup. I like to add in some squash, zucchini, and carrots to get in a hefty serving of vegetables. I also add a dash of cumin because the broth can be a little bland without it.
