Excellent flavor will definetly add to recipe collection. A easy way to make the tortilla strip topping is take 4 or so corn tortillas, slice them into strips with a pizza slicer and put then in the oven on broil for a few minutes. Gives it an authentic restaurant crunch.

This is by far my favorite Chicken Tortilla Soup recipe! I followed some of the others' suggestions and added a little bit of corn, and I also added some chipotle seasoning to it. Yummy!!!

Very good! Wife loved it. I did however add a teaspoon of cumin for flavor.

Is it odd that my favorite tortilla soup is done by a British man? I make this using half a rotisserie chicken and I add two cans of black beans. Also, add two cups of frozen corn. With those additions, I add another cup or two of chicken stalk. I also make my own stalk from the rotisserie chicken carcass. Not sure how much salt is in this when I'm done, but I never have to add any. I also use about 1/4 cup of lime juice, which is about two rather large, juicy limes.
I think I might be allergic to jalapenos because when I made this the first time, BOTH my hands were swollen/red up to my elbows for about four hours (and no I did NOT touch the seeds and only BARELY touched the jalapeno's with my finger tips on my right hand. Now I use two small cans of green chiles (8 oz. total instead. I never do the tortillas. And it's plenty good without the cheese.

I made this for my NYE party and it was a HUGE hit. For NYE I doubled the recipe and used the whole chicken.

Loved this soup! Tweaked it a bit though. I fire roasted three tomatoes by putting them on a bamboo skewer over the stove. After they were flame roasted on both sides, I too fire roasted two red bell peppers. I peeled off the really black parts only leaving a bit of the burnt peel to add a smokey flavor. I then diced them and tossed em in the pot. I also added a bag of frozen corn, a teaspoon of cumin and half a teaspoon of chili powder and more salt and pepper. I placed four corn tortillas in the oven @ 400 for about three minutes to get em just a little crispy, then I sliced them and added them to the soup, which made the soup thicker and all the more flavor full. Squeeze in some lime juice and you have the ultimate feel good soul food! Yumma-liscious!

Terrific! Made this soup twice - first time following the recipe, and 2nd time made a few minor changes. We liked it the first time and LOVED it the second time. Changes: I used half the chicken stock (it was pretty watery the first time around and doubled the fire roasted tomatoes. Also used the crushed tomatoes vs. the diced tomatoes, which I liked a lot better in terms of texture in the soup. Only used one larger jalepeno the second time, because it's all I had on hand, and it still tasted great. I used olive oil in stead of vegetable oil, and corn tortillas instead of flour, which added great flavor to the soup - AMAZING. Will make again and again.

Excellent soup! Our second time making it was today. This time, I added some paprika and a tiny pinch of ground cumin (my husband loves it. I also increase the number of jalapenos and add some long green hot peppers for some added kick. Good stuff! :
